A Café Reader Review: Sheet Pan Fajitas

I'm curious, is it just the US that starts going crazy about anything pumpkin around this time of year?
Perhaps our international readers could chime in on this!?
I'll be the first to admit, it does feel a little over the top. But in all honesty....I kind of love it 🙃 Not necessarily for the flavor itself, but for what it represents. It feels like a built-in reminder of the turning of seasons and that life keeps moving forward.
My family lived in the UK for many years, but I still remember how disoriented life rhythms felt at first. It took me a while to put my finger on exactly what was missing. Eventually I realized it wasn't the actually US holidays themselves I was longing for. It was the familiar cadence and sense of forward momentum they provided.

But then a few years in, I discovered the UK (and every other country I assume!) had the very same thing, it just looked a little different. Instead of fireworks in July for the Fourth, it was fireworks in November for Guy Fawkes Day. And instead of waiting for Thanksgiving to pass before the Christmas decorations appeared, the Brits start decking the halls in early November (I, for one, was completely on board with that one 🙌)
All of this is to say: there is a quiet but wonderful aspect to those familiar seasonal rhythms (even if they come a little earlier than some would like!) and the way they nudge us forward in life and routine. The rise of all things pumpkin seems to say, “It’s time to return to the routine”....back to intentional meals and a little more structure after a glorious but chaotic summer.
Which brings me to exactly the recipe I'm sharing with you today...
For me, our Easy Sheet Pan Fajitas recipe perfectly captures the feeling of summer winding down and life settling back into a rhythm. And it's ridiculously easy! Everything goes on one pan, meaning minimal prep and even less cleanup. The chicken comes out tender, the peppers get a gorgeous caramelized edge, and the whole thing comes together fast enough for even the busiest weeknight.
