Hi friends, Cait here (Chris’s daughter!)

As many of you know, The Cafe isn’t exactly a young blog- let’s just say…she’s of a certain age 😉. Over the last few months I’ve been working behind the scenes finding recipes in need of a face-lift…or in some cases, let them gracefully retire.

But, as I’ve been digging through the archives I realized something: some of these recipes are really good!

I’ve been busy in my own kitchen resurrecting some of these gems and it got us thinking that some of these are too good not to re-share with our sweet audience.


So, we’re kicking off a new series called Best Bites. Every few weeks we’ll share with you one of these ‘diamonds in the rough’- recipes we’ve rediscovered (or never stopped making in the first place!) that deserve another moment in the spotlight. Some will be a few years old; others go back to the earliest Café days. We hope you enjoy our little culinary excavation and maybe find/re-find some few favorites along the way.


Onto the Recipe…Easy Roasted Pumpkin Coconut Curry Soup

We’ve lived lots of places over the years, but nowhere with real fall…until Asheville. We moved here about 4 years ago and I am completely taken with this season here- crisp mornings, sunshine, leaves that slowly turn from green to gold, cozy evening light and just enough time to make ALL the pumpkin things my family can tolerate.

One of my favs is this Easy Roasted Pumpkin Coconut Curry Soup from 2017. You see, I am a little notorious for burning things on the stovetop (4 kids, 2 dogs, a job- you get the gist!😅). So, the fact that this only needs about 10 minutes of my direct attention makes it an absolute winner.

I make a big batch and then eat it for a week for lunch all week. And, because I’m on the ‘protein wagon’ these days (yes, I’m of a certain age too), I swap in chicken bone broth for the regular broth. It adds a nice boost of protein…my little trick for turning a veggie based soup into a protein win! The house smells amazing and it’s just plain delicious.
