This is Scott, the resident photographer and business guy. I work with my bride, Chris, who thought of this blog in the first place!

As our daughter, Cait, shared with you in the first Best Bites email, different members of the Café team will be sharing one of their favorite recipes from the deep (1,700+ posts!) archives of The Café Sucre Farine. Well, today it's my turn!

Most of you know me as the photographer behind our little part of the world. As long as I can remember, I've had a love of capturing life via all types of picture-taking. These days, food photography has been my passion. Today, I get to put on a different hat, so here goes!


Many of you experienced Café readers know that one of my highest praises to Chris when she goes into test mode (which happens 5-6 days a week - that girl loves to create!) is the comment, "Wow! This tastes like candy!"

Now don't misunderstand, it could be a dessert, a salad, an entrée, or in this case, a delicious little (don't make mine too little!) bowl of Louisiana flavor called Chicken Andouille Gumbo. The comment comes from my love of all things sweet - a trait which I've had since birth, as far as I know! But "sweet" in my vernacular also is a superlative comment meaning, "This is outstanding, I could eat it all day, every day!"


Well, this Make-Ahead Chicken and Andouille Gumbo checks all the boxes in my opinion! It's got just a touch of sweet, a little bit of heat, it's hearty, and so full of flavor. Paired with a side of rice and decorated with finely sliced scallions, it's just a wonderful bowl of Cajun happiness!

One little sad thing about living with a food creator is that Chris is always doing something new, so the prospect of having the same thing on rotation is not in the cards! But, no complaints here! Virtually everything that comes out of our kitchen is simply amazing. It's just that, occasionally, I'd love a repeat. My dream came true this past weekend, as we had invited new friends for dinner to enjoy this recipe. Chris and his lovely wife Alicia, actually another food blogger (Balancing Motherhood) here in Asheville were our special guests and we enjoyed a wonderful time with lots of fun conversations and big bowls of this delicious gumbo!

Now, thanks to Best Bites , plus the culinary skills of Cait and Lindsay, (our amazing daughter and daughter-in-law) I can often enjoy a repeat Café recipe when I go over to their houses for supper! Hallelujah!

P.S. From Chris - Scott really is a good sport! Last night, feeling a little lazy, I asked, “Would you like gumbo for dinner, or a slice of pizza from the freezer? I could just reheat the pizza in the air fryer.” He (very nicely) said, “Well, we did have gumbo for breakfast and lunch today, so maybe the pizza would be good.” 😂 So, while he says he could eat this gumbo all day, every day… hmm, perhaps there is a limit after all!
